Our feature this month is Maple Bacon! Maple ice cream, Real Bacon Pieces, and Pecans. I know, bacon ice cream. It’s bacon, and you can’t go wrong with bacon, but on ice cream? I was skeptical but optimistic trying this one, and I was very pleasantly surprised.

It’s the waffle cone that ties it all together. Think about it; it’s a waffle. Waffle, bacon, and creamy maple syrup are such a winning, classic combination. The waffle cone is that perfect balance between sweet and savory and it really bridges the gap between the sweet maple ice cream and the savory bacon pieces. The pecans do a similar job going equally well with sweet and savory. Combined, all of these elements create a complex, varied network of flavors and textures. Both cone and pecan give it different crunches, sometimes harder or softer, affording many levels of texture. The bacon pieces are chewy and flavorful, sometimes more salty, other times highlighting the savory. The saltiness of the bacon on the backdrop of maple sweetness gives it hints of a salted caramel style.

Maple syrup was meant to be ice cream. The cream mellows out the concentrated sweetness of the syrup and creates a perfectly balanced flavor. Sub Zero ice cream especially highlights that creamy syrup flavor because no air is whipped into the ice cream, so there’s no spongey-ness to interrupt that beautiful smooth texture. Syrups combine well with the cream to really turn it satiny. I think I would love this ice cream even without the other flavors and textures, which makes it the perfect background to combine them with.

Although other nuts are available to change up this flavor, I think pecans are the perfect default. I may be biased, as they’re my favorite nut, but pecan classically goes with maple and I like the softer, easier crunch, letting the waffle cone be the crisper crunch.

Bottom line: The beauty of breakfast turned ice cream: sweet, savory, salty, smooth, crunchy, and everything in between, this adventure is for the “variety is the spice of life” crowd!
