Our feature this month is Pumpkin Spice Latte, a coffee spin on the autumn classic. Pumpkin and Coffee ice cream, Cinnamon, and Cheesecake Bites in a waffle cone. Pumpkin and coffee are both enhanced by cinnamon, but the cheesecake bites really take it next level with their texture and creaminess. It’s all the goodness of fall in a cup.

I love cinnamon in ice cream. I’ve said it before and I’ll say it again—cinnamon in ice cream is genius. The light heat of the cinnamon balances the cool of the ice cream perfectly, and of course, pairing with pumpkin in the fall is a must. There’s a reason pumpkin spice is such a thing this time of year, and the addition of coffee makes it different enough to avoid being too samey. It’s just a light touch of coffee, mostly there for that warm, earthy smell blending with the cinnamon. As always, the waffle bowl supplies that fresh-baked crunch. The creaminess, the spiciness, the warm and the cool, I can almost smell the newly raked leaves and crisp autumn air.

Pumpkin spice cheesecake is my favorite Thanksgiving tradition, and these cheesecake bites are bringing back so many good memories. They give a thick creamy texture to complement the ice cream’s smooth creaminess. The cheesecake flavor combined with the pumpkin and cinnamon in the background really evokes that cozy fall.

The coffee is not meant to overwhelm the pumpkin spice, so it’s a lighter flavor than you might expect, but it is just a flavor—no actual coffee in it—so it doesn’t add any caffeine and it’s safe for children. If you want a real coffee experience, this is the combo I would choose for an Affogato or a coffee float. I know a traditional Affogato uses vanilla ice cream, but this just begs for the twist of pumpkin spice ice cream with the warm espresso poured over the top, in which case, I would leave the coffee flavoring out since you’ve got the real thing right there. There are so many ways to enjoy this winning combo of flavors.

Bottom line: Pumpkin spice with a light coffee twist, warm and cool, smooth and creamy, spice-y and earthy, autumn in a cup.
