WHAT DOES LIQUID NITROGEN DO?
Great question! We’ll start by telling you what liquid nitrogen does not do. Liquid nitrogen will not change the flavor, smell, or taste of your ice cream creation. The “liquid” part of nitrogen simply means it has been compressed from a gas state to a liquid state and made to be really, really cold.
So why do we use it to make ice cream? Liquid nitrogen instantly freezes your ice cream sensation. Typical ice cream is slow churned until frozen. While this might sound luxurious, it actually fills your ice cream with air and ice crystals, making it not-so-creamy.
