Our feature this month is the Holiday special, Eggnog Gingerbread! Eggnog Ice cream with Heath pieces, slivered almonds, and your choice of a Gingerbread Wafflebowl or Gingerbread waffle crumbles. Talk about Christmas in a cup! Heath and almonds are like almond toffee bark or Almond Roca, plus eggnog and gingerbread waffle cookies! Pretty much Christmas from three angles, and they go together perfectly.
Christmas cookies! Can we have this gingerbread waffle bowl available all year round?? It would be such a satisfying complement to a hundred combinations. (I want to try it with Bernoulli Brulee.) It is the perfect amount of Christmas spice. I prefer the crumbles mixed in rather than in waffle bowl form, but both are delicious, and a waffle bowl can always be mixed in. Still, waffle bowl pieces are one of my favorite mix-ins because freezing them directly into the ice cream makes them softer on the outside while staying crunchy on the inside. I compare it to the texture of a gooey cookie vs a crunchy one; therefore, my recommendation is if you like crispy cookies, choose the waffle bowl, and if you like soft or chewy cookies, mix it in! Mixing in the gingerbread crumbles, their crumbly, cookie texture and spice are reminders of the subtle cinnamon in the background of the eggnog ice cream, adding that Christmas spiciness, the smells of the season. After all, smell is a huge part of taste!
This is a wonderful symphony of textures and flavors. The eggnog ice cream is just so rich and creamy! Flavors like eggnog were meant to be Sub Zero ice cream. They enhance the dense creaminess characteristic of the nitrogen frozen method.
Honestly, I didn’t understand the Heath mix-in choice until I tasted it and realized it is Christmas toffee, almond bark, that classic combination of Christmas joy. That slightly toasty caramelized buttery taste! The mellow sweet break of the almond between your teeth! It’s genius. The heath has that soft crunch, that buttery taste to interrupt the richness of the eggnog with an equally rich caramel-y-chocolate taste. The almond easily gives way, the crunch crumbling in your mouth as the rich eggnog swirls around it. Textures from crisp waffle bowl to flaky toffee to the soft almond crunch juxtapose perfectly with the thick swirling richness of eggnog ice cream. Each bite leads you through the circle of Christmas flavors in new ways.
I don’t know if you can improve the Christmas-y feeling of this sensation, except perhaps by alternating sips of a comforting hot chocolate or hot steamer drink. The cold and the hot are both so intense, put them together it just makes sense!
Bottom line: Excellent texture spectrum. Rich eggnog dominates, gingerbread and almond toffee bark accent by flavor and contrast by texture. Three classic angles of Christmas. Enhance with a hot chocolate.
